Chef Agus Kartika’s Chef’s Table: Taking Indonesian Flavours on a New Route
At The Grill@LUXE, dining is more than a meal — it’s a journey. Leading this experience is Chef Agus Kartika, a visionary of modern Indonesian cuisine whose passion for local ingredients transforms traditional flavours into unforgettable culinary moments.
The Chef’s Table — A Journey Across Indonesia
The Chef’s Table has always been an immersive culinary tour of Indonesia’s diverse regions. In its previous incarnation, the menu highlighted Papua, Bali, Sumatera Barat, Jawa Tengah, Sulawesi Utara, Jakarta, and Kalimantan Selatan, giving guests a taste of regional specialities and culinary traditions.
Now, Chef Agus has shifted the journey to new regions, creating an entirely fresh experience. The new menu draws inspiration from Papua, Kalimantan, Bali, Sumatera, Maluku, Jawa, and Sulawesi — regions that bring new stories, flavours, and techniques to the table. Each dish is designed to celebrate local ingredients, showcase regional heritage, and allow Chef Agus’s creativity to shine.
This change in the menu reflects Chef Agus’s dedication to keeping the experience dynamic and exploratory, inviting guests to rediscover Indonesia through a different lens. From the bold spices of Sumatera to the delicate seafood of Maluku, every plate is a conversation between tradition and modern culinary innovation.
“The Chef’s Table is a journey across Indonesia — each dish tells a story of place, culture, and memory,” explains Chef Agus Kartika.
